1 panettone
1 cup of rum
2 glasses of water
180 grams of sugar
2-3 drops of lemon
4 yolks
40 grams flour
1/2 liter of whole milk

Cut 1 panettone in 4 slices horizontally. Mix 1 cup of rum with 1/2 cup of water and sliced ​​with this mixture the sliced ​​pieces of the slices.

Prepare a blond caramel with 100 g of sugar, 2 tablespoons water and 2-3 drops of lemon juice. Remove from the heat and, with a teaspoon, pour on the panettone. Decorate with chamois and let it solidify.
Preparation of the custard
Take a sauce pour ½ liter of milk. Add a vanilla pod to boil: break 4 eggs and divide the egg yolks from the egg whites. Keep the first and set aside the seconds, which you do not need in this preparation.
Add the yolks with the sugar until the mixture becomes swollen and foamy, then add the flour. In another pot, pour the cream obtained and mix the yolk, after filtering it out of the residues of the vanilla pod.
Continue to blend the sweet pastry cream until it begins to boil, then whisk it from the heat and allow it to cool.
Cut the panettone into 4 layers plus the cap. Stuff the layers with the creamy pastry and the Amarene Toschi.
