INGREDIENTS FOR 12/15 CUPCAKES: 125 g of butter 100 g of dark chocolate, chopped 300 g of Fiordifrutta Cherries 150 g of sugar 2 large eggs 150 g self raising flour 1 pinch of salt INGREDIENTS FOR THE FROSTING: 200 g of dark chocolate 200 g of cream 100 g of butter Amarena cherries in syrup Toschi PROCEDURE: In a saucepan melt the butter in a double boiler do with the chocolate, stirring occasionally. When both the ingredients are melted and well blended them cool and then we will join the cherry jam, sugar, pinch of salt and then the eggs and mix well with electric whisk until mixture is smooth. Finally add the flour and stir until it is well incorporated. Pour the mixture into muffin cups and bake at 180 degrees for about 25 minutes (toothpick test still valid!). While it cools prepare the chocolate ganache: In a saucepan melt the chocolate in a double boiler we merge into pieces with cream. Incorporate then with whips butter and put into the fridge the compound until it is sufficiently dense to be used.
