BAVARIAN WITH NOCELLO AND CHOCOLATE CREMOSO

Ingredients:
Bavarian cream with Nocello Toschi
Cremoso with dark chocolate
Sponge biscuit
Nocello mixture
Chocolate icing
Sugar decoration
Redcurrants
 
BAVARIAN CREAM WITH NOCELLO TOSCHI
 
175 g  fresh full fat milk
100 g  egg yolks
90 g  sugar
10 g  gelatine strips
250 g  lightly whipped cream
75 g  Nocello Toschi
 
METHOD:
BoiI the milk and add eggs beaten together with the sugar. Cook in a saucepan at 85° C. Meanwhile, dissolve the gelatine in cold water and add to the mixture. Cool to 30°C , then add the Nocello and lightly whipped cream.
 
DARK CHOCOLATE CREMOSO
 
50 g egg
60 g egg yolks
70 g sugar
20 g water
200 g Extra Toschi coating
200 g cream
 
METHOD:
Mix the sugar and water and cook at 121°C. Beat the eggs and yolks together. Gently add the sugar syrup in a fine drizzle and whisk until cold using the pate a bombe method. Then incorporate the Extra Toschi coating at 40-45°C. Finally lighten the mixture with the gently whipped cream. Fill a steel ring 22cm ø x 2 cm H. Freeze for about an hour, then turn out.
  
SPONGE BISCUIT
 
120 g  egg white
100 g sugar
80 g egg yolks
100 g flour
 
METHOD:
Whip the egg whites with half the sugar, and the yolks with the remaining sugar. Combine the two mixtures and add the sifted flour. Using an icing bag create a disc shape 25 cm ø x 3 mm H. Bake in the oven at 220°C for 6-7 minutes.
 
NOCELLO MIXTURE:
 
150 g  water
100 g  sugar
70 g Nocello Toschi
 
METHOD:
Bring the sugar and water to a boil. Cool to 30°C then add Nocello Toschi
 
CHOCOLATE ICING
 
300 g  Extra Toschi coating
50 g  glucose
120 g  cream
 
METHOD:
Boil the glucose and the cream. Then add the melted coating. Cool to 35°C.
 
 
HOW TO ASSEMBLE THE DESSERT: put the sponge biscuit soaked in Nocello mixture on the bottom of a steel ring measuring 25 cm ø x 5 cm in height. Place the frozen chocolate cremoso on top of this, then fill the mould right to the top with the Nocello Toschi Bavarian. Freeze until perfectly solid. Remove from the mould and ice with chocolate. Decorate with small squares of dark chocolate, caramelised sugar and a small sprig of redcurrants.
