Marinated sardines

Ingredients (4 servings) 600g Sardine Toschi Balsamic Vinegar "Green Line" 1 egg 2 small onions Oil for frying 1 clove garlic Sage 1 bay leaf Salt To prepare Marinated sardines Clean the sardines thoroughly, de-scale and open then out flat into two halves, flour them and dip them in the beaten egg. Fry in plenty of oil, keeping them soft and moist. Now prepare the marinade: finely chop the onions and fry them in a little oil, then add the sage, bay leaf and the garlic (crushed). After a few minutes pour in a ladle of water and a little Gino Toschi Balsamic Vinegar of Modena, bring to the boil and reduce the liquid slightly. Arrange the sardines in a high-sided dish, add salt and pour over the hot marinade. Leave to marinate for at least 12 hours before serving. Excellent as an hors d’oeuvres.
