Beat the eggs, add the grated cheese, the browned vegetables and salt and pepper. Heat a drizzle of oil in a frying pan, pour in the egg mix and cook on both sides. When the omelette is cooked, arrange it on a flat serving dish cut into wedges, finish with a teaspoon of Balsamic Vinegar from Modena added to each portion.
